Sand cake, starts by beating together one cup softened butter and 1 cup sugar till well blended. Then add 3 whole eggs, one at a time. Then add 3/4 cup of sifted flour and 3/4 cup of potato starch. Finish off the batter with 1 tsp of vanilla and 1/2 tsp grated lemon peel. Pour into prepared loaf pan and bake at 350 degrees. Bake for 45 to 60 mins. Test doneness with a toothpick.
Enjoy with strawberries or some fruit and whipped cream. Store in airtight container in the fridge.
